INTRODUCTION

 
 

With Christmas approaching, we will introduce several classic recipes for Christmas dinner in the following days. The recipe we bring today is the Christmas meal appetizer called Skillet Bacon-Cheddar Potato Dip. The cheesy potato dip is the perfect start to any dinner party, and it will absolutely be favored by your guests. The recipe we bring here can yield 24 servings with each serving size of 1/4 cup.

2 1/4 pounds Yukon gold or other yellow-flesh potatoes, peeled and quartered 

4 slices hickory- or applewood-smoked bacon 

1 10 ounce container cream cheese for cooking 

1 cup shredded sharp cheddar cheese (4 ounces) 

1/2 cup sour cream 

1/4 cup chopped green onions (2) 

1/4 teaspoon garlic salt 

Sour cream-and-onion-flavor potato chips and/or sweet pepper wedges

Preheat oven to 425 degrees F and cook potatoes. Cook them in a large saucepan, covered, in enough boiling. Lightly salted to cover for 15-20 minutes or until potatoes become tender. Drain potatoes.

Cook bacon in a large skillet over medium heat. Cook until crisp. Then remove bacon and drain on paper towels. Next crumble bacon and reserve 1 tablespoon of the crumbled bacon for topping purpose.

To prepare cheese mixture, you need to combine the following ingredients in a large bowl: the remaining crumbled bacon, cream cheese, 3/4 cup of the cheddar cheese, the sour cream, green onions, and garlic salt. Next, press cooked potatoes through a ricer onto the cheese mixture. Make sure to stir gently to combine. Then spoon potato mixture into a seasoned or generously greased 8- to 9-inch cast-iron skillet.

Bake the potato mixture for 20-25 minutes until it's heated through or the temperature at the center reads 160 degrees F. Until then you can remove it from the oven.

Preheat broiler. Top potato mixture with remaining 1/4 cup cheddar cheese and reserved 1 tablespoon crumbled bacon. Broil it with 4-5 inches from the heat for 1-2 minutes or until cheese is melted and becomes bubbly. Now you can serve dip with potato chips. 

 

Tips: In case potato ricer is not available, you can mash potatoes with a potato masher until fluffy.
