10 slices of watermelon wedges, about 2-3 pounds
1/4 cup sugar
2 tbsp honey
1 tbsp cayenne pepper
1 tbsp lemon zest
1 tbsp kosher salt, or to taste
1/4 cup mint leaves
scoops of ice cream, to taste

1

Preheat the grill to a high heat and lightly oil the grate.

2

Whisk the sugar, honey, cayenne pepper, lemon zest in a bowl into a mixture.

3

Brush the watermelon wedges all over with mixture to create an even coating, and put them on the grate, waiting for about 2 minutes for them to develop beautiful grill marks, and flip over for another 2 minutes.

4

Take the watermelon slices out into a platter and form a beautiful stacked circle; top them with scoops of ice cream and edge with mint leaves. Serve immediately.
