Lamb

INTRODUCTION

 
 

Tired of beef grilling, do you miss the taste of juicy lamb chops? Oh, but you hate their intense odor? Don't worry, today we gonna solve this problem and make sure delicious food taste is reserved. A grilled lamb recipe with added garlic flavor- you can't miss it!

1 1/2-pound lamb racks
1 head garlic
3 tbsp extra-virgin olive oil, plus about 1 tsp for garlic
1 tbsp chopped parsley leaves
1 tbsp finely chopped rosemary
1 tbsp finely chopped thyme
1 tbsp hot pepper flakes
2 tbsp fresh lemon juice
kosher salt and freshly cracked black pepper, to taste

Preheat your grill to a medium heat.

Peel off the outer layers of the garlic, remaining the skin around. Cut the top off its head, about 1/4 inch, and drizzle with 1 teaspoon olive oil. Spray some salt on the top, and wrap it in tinfoil. Roast the garlic on the grill for about 30 minutes, put out and let it cool down.

Squeeze the roasted garlic cloves into a mixing bowl. Add olive oil, hot pepper flakes, lemon juice, chopped parsley leaves, rosemary and thyme together. You can also put some salt and cracked black pepper depending on personal taste. Whisk them to a paste.

Spray some salt all over the lamb racks, and rub the garlic-herb mixture evenly thereafter. Put it aside for rest about 1 hour.

Preheat your grill to a high heat.

Put the lamb rack on, and grill it for about 2 minutes on the first side. Turn over, let the second side grill for 4 minutes, then move it to the indirect zone for continue grilling about 15 minutes, to reach a perfect doneness you like.

Transfer the lamb onto the board and wrap it with aluminum foil. You are about to wait for 10 minutes before chopping them down to lamb chops.

Roasted garlic adds some sweet flavor to the lamb rack and meanwhile remove its unpleasant odor - great to gain a double advantage!
