INTRODUCTION

 
 

If you are a loyal fan of fish and tacos both, the recipe we introduce today will definitely delight you. We have injected various elements from different grill masters into this recipe, and this has made the recipe unique and special. The process seems a little complicated, however, it's actually not as that time-consuming as it seems because you can totally leave your guests to assemble the tacos themselves.

2 garlic cloves, finely chopped

3 Tbsp. fresh orange juice

1 tsp. dried oregano (preferably Mexican)

2 cups chopped white onion, divided

¾ cup chopped cilantro, divided

¼ cup extra-virgin olive oil, plus more for grill

5 Tbsp. fresh lime juice, divided

1 lb. tilapia, striped bass, or sturgeon fillets

Kosher salt, freshly ground pepper

1 cup mayonnaise

1 Tbsp. milk

4 corn tortillas

2 avocados, peeled, pitted, sliced

½ small head of cabbage, cored, thinly sliced

Salsa Verde

Lime wedges (for serving)

Season fish with salt and pepper.

Make onion mixture by mixing and stirring garlic, orange juice, oregano, 1 cup onion, ¼ cup cilantro, ¼ cup oil, and 3 Tbsp. lime juice in a medium bowl.

Spread half of onion mixture over bottom of a glass baking dish. Place fish on the onion mixture. For the remaining onion mixture you can spoon it over fish. Cover and chill for half an hour. After half an hour then turn fish, and further cover and chill for another 30 minutes.

To make lime mayonnaise for serving purpose later, whisk mayonnaise, milk, and remaining 2 Tbsp. lime juice in a small bowl.

Time to grill fish. Set the grill medium-high heat and oil the grate. It's recommended to grill for 3-5 minutes per side, with some marinade still clinging, until just opaque in the center.

Now time to grill tortillas. It's ideal to grill for 10 seconds per side, until it becomes slightly charred. Next chop fish and place it on a platter. Time to serve with  lime mayonnaise, tortillas, avocados, cabbage, Salsa Verde, lime wedges, and remaining 1 cup chopped onion and ½ cup cilantro. It's not necessary for you to assemble the tacos one by one. Just let your guests make their own tacos and enjoy from such interesting DIY experience!
