As a great choice for both side dish and appetizer, grilled oysters will start your enjoyment in the barbecue. Mixed with melted butter, you will feel extreme tenderness from the flesh and sweet fragrance from the butter, forming into an unprecedented taste. 10 fresh oysters
1 cup unsalted butter, softened
1/3 cup fresh lemon juice
1 tbsp shallots, minced
1 tbsp fennel seed, ground
1 tbsp black pepper, chopped
kosher salt, to taste

Preheat the grill to a high heat.

Grill the oysters directly on the grates for 5-10 minutes until they begin to open shells.

Take the oysters aside and use a knife stab between the shells and twist, remove the flat side of shells.

Put the softened butter into a skillet and cook on the grill, until it gets melted.

Sprinkle some salt on the oysters and spray some lemon juice afterwards; then place about 1 tsp of the melted butter on each oyster. Top with minced shallots, fennel seed and black pepper. Serve warm.

Be careful when shucking the oyster after grilling; you may need a pair of thick gloves to prevent yourself from getting hurt.
